Moroccan Lamb Stew

It’s really important to me that my kids eat balanced meals. Growing kids need a whole variety of nutrients to keep them healthy and filled with energy. This is an easy simple balanced family dinner recipe.

Prep Time

        Prep time: 15 minutes
        Cook time: 1 hour & 30 minutes
        Yield: Serves 4


Ingredients

    •    1 tbsp oil
    •    pinch salt
    •    1 tbsp flour
    •    2 tins tomatoes
    •    1 red onion, diced
    •    pinch black pepper
    •    2 cloves garlic, finely chopped
    •    2 large carrots, peeled and sliced
    •    3 tsps Moroccan spice seasoning
    •    1 large sweet potato, peeled and diced
    •    4 lean lamb leg steaks (OR can use Diced Lamb approx 500 - 600g)


Method

  1. Preheat the oven to 180C
  2. Dice the lamb leg steaks and trim off any fat
  3. Toss the flour, salt and pepper onto the lamb and mix together to coat everything
  4. Add the olive oil to a large pan (one you can use in the oven as well as hob)
  5. Add the lamb and stir fry for 2-3 minutes
  6. Add the onions and garlic and fry for a few minutes
  7. Tip in the Moroccan spice and mix well
  8. Add the sweet potatoes
  9. Add the carrots
  10. Stir everything together
  11. Tip in the tinned tomatoes and 1/2 tomato can full of water
  12. Stir everything together
  13. Put in the oven and cook for around 90 minutes or until lamb is tender
