Garlic Prawn Rolls
Entertaining a crowd just became easier with these pass-around prawn mini-rolls.

• Yield: Serves 12
Ingredients
• 150g unsalted butter
• 3 garlic cloves, crushed
• 2 tbsps chopped flat-leaf parsley
• 1kg cooked and peeled small prawns
• 12 small par-baked French bread rolls
Method
- Preheat the oven to 170°C.
- Make a cut lengthways in the top of each bread roll and open out.
- Place butter and garlic in a small saucepan over low heat and stir until butter has melted. Remove from heat and use a pastry brush to brush insides of the rolls with some of the garlic butter. Add parsley to the remaining garlic butter and stir in the prawns.
- Fill each roll with the prawn mixture and place on a baking tray. Bake for 10 minutes until rolls are crisp and prawns are heated through. Serve hot.
